Learn about the project outcomes from an ongoing Wabasha area based University supported project, “Cull Cow to Food Shelf: Supply Chain Modeling for Wabasha County Area”.
This project partnership between the Wabasha County Food Access Network and University of Minnesota Regional Sustainable Development Partnerships (RSDP) aims to address protein shortages in Southeast MN food shelves by exploring a local supply chain that connects cull cows from regional farms to hunger relief organizations. Cull cows, though no longer productive for certain dairy or beef markets, offer safe, nutritious meat that could help meet community needs. Building on a successful community-initiated 2024 pilot with Wabasha Area Food Share and a local farmer, the project has evaluated whether this direct market model for ground beef can be scaled sustainably across Wabasha County and explores what it would take to initiate a more formal program. Throughout this year-long project, the team investigated challenges, potential benefits, and overall feasibility of this model to support farmers, meat processors, and food shelves alike.
SHIP is a state-based program that works at the local level to support healthier communities by expanding opportunities for active living, healthy eating, wellbeing and tobacco-free living, thereby helping to reduce the leading causes of chronic disease and death.
